My broccoli addiction & recipe: superfood

I have an insane broccoli addiction that has existed since I can remember… It’s one of the vegetables I can eat everyday and will never get tired of.  For the last year, or so, I have been averaging three packs of broccoli a week. Yes.. a week.  It’s where I get most of my greens in and is one of the consistent ways I continuously pack on the beneficial nutritious aspects of green food.

Broccoli is considered a super food that contains folate, fiber, vitamin C, vitamin A, and calcium.”  It can be cooked in a variety of ways (which is always a plus) and has been shown to have protective factors against heart disease and diabetes.  It’s my understanding that it has protective factors against hypertension/diabetes but more research is needed for the purposes of being conclusive.

I just wanted to share my favorite broccoli recipe as we start off the new year. I obviously just finished a bowl and am in good spirits at the moment. 🙂

  1. Preheat your oven to 400 degrees
  2. In a pan, lightly toss your broccoli in organic olive oil
  3. Place broccoli in the oven until you note that the broccoli is lightly crisping and has a slight brown on the top layer (approximately 20 minutes)
  4. Take the broccoli out of the oven and lightly salt it with Himalayan salt.
