Home-made pho: Dinner


TANG:  Tonight’s dinner consisted of home made pho. The broth was slowly cooked with beef bone and tendon for approximately 3 hours to provide the soup with a true authentic taste.

Ingredients:

  1. Pho Beef Paste
  2. Rice noodle
  3. Cilantro
  4. White onion
  5. Salt
  6. Beef meatball
  7. Lemon
  8. Vietnamese meat loaf

Cook time: 2-4 hours

Pho is interesting… it has a sentimental value for me. I like that it clears up my sinuses, is a sweet reminder of my home, and reminds me of the ways my Mom tirelessly cooked for my siblings to ensure we were always fed.  My Mom and I often have conflicting views around gender, societal constructs, and style but I am always astounded by her resilience… especially when it came to raising and feeding thirteen children.
